Weekly Recipe: Pepperoni Scrambled Eggs

This is just about the yummiest breakfast dish. I sometimes make it for breakfast for dinner because it is VERY filling. It is from a Hungry Girl cookbook, so I usually give Dustin as least 2 servings, because the portions are too small for a marine!

Pepperoni Scramble
From: Hungry Girl 200 under 200 Cookbook
1 serving, 10-15 minutes to prepare and cook

Ingredients
9 pieces turkey pepperoni (quartered, or I use about 40 mini turkey pepperoni)
1/2 cup egg substitute
1/4 cup canned diced tomatoes with Italian seasonings, drained
1/3 cup shredded fat-free mozzarella cheese
Dash salt, garlic powder, oregano

1. Spray a pan with nonstick spray and bring to medium heat. Add eggs, pepperoni, and spices. Cook like you would a scramble.

2. After about a minute, add the tomatoes. Scramble for another minute or so.

3. Sprinkle with cheese, reduce heat to low, and cover pan to let cheese melt.


4. Dig in!
