Weekly Recipe: EZ Tomato Basil Chicken

This is the easiest dinner recipe I have ever made and is also incredibly delicious! I doubled the original recipe so that you use the entire giant can of tomatoes. If you buy a smaller can or don't mind saving a partial can, then you could cook only half or a quarter of the recipe I post.


EZ Tomato Basil Chicken

Ingredients
2 pounds raw boneless, skinless chicken breast
1 28-oz. can crushed tomatoes with basil
3 cups thinly sliced onions (2 large onions)

1. Preheat the oven to 350 degrees. Line 13 x 9 inch baking dish with aluminum foil and spray with nonstick cooking spray to coat.

2. Cook onions over high heat in a saute pan sprayed with nonstick spray, just until they begin to brown (about 3 minutes).

3. Pour half the tomatoes on the bottom of the baking dish. Place chicken on top of the tomatoes, and then layer the onions on top of the chicken. Pour the remaining tomatoes over the chicken and onions.

4. Bake in the oven for about 30 minutes (until chicken is cooked through). Dig in!
