Weekly Recipe: Buffalo Chicken Sandwiches

This is our FAVORITE recipe to cook up for dinner. Dustin orders buffalo chicken sandwiches at nearly every restaurant we go to, so this was a super find. We have tweaked and simplified it quite a bit, but it is based on a recipe from Rachael Ray.

Buffalo Chicken Sandwiches
Adapted from: Rachael Ray's 30 Minute Meals 2, 2003
4 servings, 15 minutes

Ingredients
4 pieces boneless, skinless chicken breast (about 6 oz. each)
Salt and pepper
Olive oil
1 teaspoon chili powder
2 tablespoons butter
1/2 cup Frank's Red Hot sauce
4 rolls or buns
Lettuce
Ranch or Blue Cheese Dressing

1. Heat a large skillet over medium-high heat. Season chicken with salt, pepper, and chili powder, and drizzle with olive oil to coat. Pan grill, 5 minutes on each side.

2. Melt butter in a glass bowl. I do it in the microwave. Add hot sauce to the butter and mix well.

3. When the chicken breast are done, remove from pan and add to the bowl to coat evenly with hot sauce mixture.

4. Serve on buns with lettuce and dressing.
