Weekly Recipe: Light Crab Cakes

Since beginning my "eating healthy" resolution, the Spark Recipes app on my iPhone has been a HUGE help. Spark People is a calorie tracking, etc. Web site, and their app is a collection of user-created recipes that are often lowfat, low calorie, and delicious. We had bought some cheap-o imitation crab meat, and this recipe seemed like a perfect way to use it. The recipe is delicious, and only around 200 calories per crab cake. Enjoy!


Light Crab Cakes
Recipe from Spark Recipes
6 servings, 20-25 minutes


Ingredients
1 package (12 oz.) imitation crab meat
2 T. mayonnaise
1 oz. lemon juice
3 T. onions, chopped
1 T. Old Bay seasoning
3 eggs, beaten
1 + 1/4 c. bread crumbs

1. Chop up crab meat in a food processor.

2. Mix crab, mayo, eggs, onions, bay seasoning, and lemon juice in a large bowl.

3. Slowly add bread crumbs.

4. Form into patties (around 6 hamburger-sized patties).

5. Coat a large non-stick pan with cooking spray. Heat to medium heat (no hotter). Add patties, cooking on medium heat and turning frequently for 5-6 minutes, or until heated through.
