Cheesy Corn Rice

I found this recipe online about five years ago, and then have been making this at least once a year for holidays ever since! I love this recipe because it only takes a few staple ingredients, and can be completely prepared in the microwave. That is always really helpful around the holidays, when we usually have a giant bird or ham cooking in the oven.


Cheesy Corn Rice
Recipe from Nestle
8 servings, 25 minutes from start to finish

Ingredients
2 packages Stouffer's corn souffle (defrosted)
1 + 1/2 c. cooked white rice
1 + 1/2 c. shredded cheddar cheese
4 oz. diced chiles (from can)
1/2 t. cumin
1/4 t. garlic powder

Directions
1. Cook white rice according to package directions. Meanwhile, defrost corn souffle in microwave (I put both packages in for 5 minutes on high).

2. In a 1+1/2 qt. microwave-safe dish, mix all ingredients. Cook on high for 8 minutes. Stir, and cook on high for 10 minutes, or until rice mixture is set.
